You know how frequently the most basic ideas are the most effective? Skewers of Caprese Salad with Green Olives, for example.
The inspiration for this came from a gathering we had a few years ago. I was making a ton of time-consuming appetizers when I realized I needed something else.
“Make it Healthy,” the decorator in me advised, while the health writer in me added, “Make it Colorful.”
Plus, I wanted to keep things simple and didn’t want to go to the store again.
So I looked in the cupboard and discovered green olives.
Green olives can’t go wrong, I reasoned, but I didn’t know what to do with them to make them festive enough for a party.
Then I remembered Caprese Salad, one of my favorite salads.
I went to the refrigerator and looked inside.
I was planning to make a Margarita pizza with mozzarella and basil, and there it was.
That would be excellent for these Caprese Skewers, and the mix of tomato, basil, mozzarella, and green olives would set them apart.
Adding 6′′ bamboo knot picks to them makes them much more festive. Then, if I dressed it with a tart balsamic dressing, it could just work.
And it worked!
These Caprese Skewers earned the most comments of all the appetizers, and they were gone in a flash.
My only regret was not producing more.

- 12 large basil leaves, halved lengthwise, yielding 24 pieces
- Small cherry-sized Ciliegine Mozarella Balls (24 Ciliegine Mozarella Balls)
- 24 Pimiento Stuffed Green Olives
- a total of 24 4″ skewers
- 2 tbsp Extra Virgin Olive Oil
- 2 tblsp balsamic vinaigrette
- 1/8 teaspoon of salt
- 1/8 teaspoon of pepper
- 1/2 teaspoon mustard (Dijon)
- a half teaspoon of lemon juice
- a half teaspoon of honey
On each skewer, thread a tomato, folded basil leaf, Mozarella, and green olive.
Olive oil, balsamic vinegar, salt, pepper, Dijon mustard, lemon juice, and honey are combined in a mixing bowl.
Drizzle some balsamic vinegar on top. Drizzle a light coating of dressing over each skewer and place on a serving dish.
